Ten years watching places sell themselves better than they were worth.
Then I came back to one that is worth more than the story it tells.
I started in Alba, at art school, in an underground scene where things got made
because they had to get made. I drew. At nineteen I left for Australia and never
stopped after that: Broome, the Gold Coast, a year and a half on an island in
Thailand during Covid, Ibiza, Mexico, Costa Rica, Chiang Mai. In between, the
Master in Food Innovation at Pollenzo.
I have worked in mediocre places told brilliantly, with a queue outside, and in
places worth twice as much that nobody could find. The difference was not
the kitchen. It was who bothered to tell the story.
My father grows ancient grains under permaculture above Dogliani. From him I
learned the thing I use every day: quality shows itself, and whoever has to
explain it usually does not have it.
I have spent the last few seasons in a kitchen in Spotorno, dinner service every
evening. I know what a season with no time to answer the phone is like.
The Gulf is the best place I have ever been, and it tells its own story
worse than any place I have seen.
